<strong><strong><strong><strong>材料<br />
牛肉片200公克杏鮑菇100公克薑片10公克水30㏄<br />
<br />
調味料<br />
蠔油2大匙鹽1/4茶匙酒1茶匙太白粉水1大匙<br />
<br />
醃料<br />
鬆肉粉1/2茶匙醬油1茶匙鹽1/4茶匙太白粉1茶匙蛋液1大匙水30㏄紹興酒1/2茶匙糖1/2茶匙<br />

作法<br />
1.將牛肉片加入所有醃料中,靜置約30分鐘,備用。&nbsp;&nbsp;<br />
2.將杏鮑菇切成0.5公分厚片,備用。&nbsp;&nbsp;<br />
3.取燒接1/4鍋油,燒熱至160℃,放入作法1醃好的牛肉片,攪散後炸至肉色呈白盛出,將油倒出。&nbsp;&nbsp;<br />
4.取作法3炸牛肉片的原鍋,放入1茶匙油、薑片與作法2切好的杏鮑菇片,以小火炒2分鐘。&nbsp;&nbsp;<br />
5.於作法4加入作法3炸過的牛肉片、水及太白粉水之外的剩餘調味料,以中火炒約2分鐘,最後加入太白粉水勾芡即可。</strong></strong></strong></strong>
