所需材料:<br />
<strong>鱔魚</strong><br />
<br />
調味料:<br />
<strong>大蒜、豆瓣、薑片、蔥段、醬油、鹽、味精、太白粉、八角茴香、花椒、胡椒、料酒</strong><br />
<br />
做法:<br />
<strong>1、提前醃製10分鐘,放八角茴香、花椒、鹽、胡椒、料酒。<br />
2、鱔魚洗乾淨,切成6公分長的段。獨頭大蒜去外皮、洗淨,放入冷水鍋內煮熟待用。豆瓣剁細。<br />
3、炒鍋置旺火上,放油燒至七成熱,放入鱔魚炒至斷生,加豆瓣、薑片、蔥段炒香至油呈紅色時,加鮮湯、醬油、鹽、大蒜燒沸入味至軟熟,放味精、太白粉待收汁後起鍋裝盤即成。</strong><br />
