<strong><strong><strong><strong>食材 ( 8 人份 ) <br />
土雞1隻約3斤,新鮮去殼栗子230克,蔥2根《切段》,蒜頭8~10顆《去膜不用切》,老薑片10片,小辣椒2根,大辣椒1根,九層塔1大包。 <br />
調味料:米酒1又1/4米杯,豆油伯醬油約6大匙,白胡椒少許。 <br />

作法<br />

1…起熱油鍋2大匙油《食用油1&黑麻油1》,中小火爆香薑片,蒜頭,蔥白段等至微焦黃,續放入辣椒炒2下。 <br />

2:轉大火,放入雞肉翻炒ㄧ會至完全變色,放入栗子炒幾下,淋酒,淋醬油,白胡椒粉炒幾下,續加入2米杯水,蓋鍋轉小火約煮20~22分鐘,《中間時間可開蓋翻炒幾下。 <br />

3:開蓋轉中大火收些湯汁,試味道後轉放入大辣椒片,九層塔及蔥綠段,拌炒幾下即可盛盤。</strong></strong></strong></strong><br />
