所需材料:<br />
<strong>牛裡脊、小蘇打或嫩精粉、蛋清、洋蔥、蔥段</strong><br />

調味料:<br />
<strong>蠔油、黑胡椒粉、醬油膏、鮮雞粉、糖、鹽、料酒</strong><br />
<br />
做法:<br />
<strong>1、牛裡脊切條,加鹽、料酒、小蘇打或嫩肉粉、蛋清,攪拌均勻,然後放置幾分鐘。之後往牛肉裡加一點水,再攪拌幾下,放幾分鐘後待水分吸收,再加一點水,然後醃十幾分鐘。<br />
2、洋蔥及蔥段切粗絲。<br />
3、鍋燒熱後倒油,油溫即放入牛肉,炒至斷生。<br />
4、鍋裡留底油,放入蠔油和黑胡椒粉炒香,放洋蔥、蔥段翻炒,然後放入牛肉,再加一點醬油膏上色,根據口味加鹽,加鮮雞粉、糖提鮮。</strong><br />
