所需材料:<br />
<strong>雞胸肉、火龍果、彌候桃。</strong><br />
<br />
配料:<br />
<strong>全蛋液、麵粉、麵包糠;蔥、姜。</strong><br />
<br />
調味料:<br />
<strong>柳橙汁、檸檬汁、蘋果醋、鹽、雞精粉、胡椒粉,料酒。</strong><br />
<br />
做法:<br />
<strong>1、雞肉用拍肉槌拍鬆,剁十字花刀後,改成二公分見方的小塊,用鹽、雞精粉、胡椒粉,料酒,蔥、姜醃二十分鐘。<br />
2、火龍果、彌候桃用挖球器挖成小球備用。<br />
3、將醃好的雞肉用手握成小球狀,依次滾上麵粉、全蛋液、麵包糠,再稍稍握實,整理成球坯。<br />
4、鍋內熱油,中小火將雞球炸至金黃色撈出。<br />
5、取淨鍋,將一份檸檬汁、一份蘋果醋、三份橙汁混合,再加入少許的太白粉與吉士粉,拌勻成米湯芡,倒入雞球、和水果球,使其沾裹上味汁,即可起鍋裝盤。</strong><br />
