食材 <br />
馬鈴薯(中型) 3顆 蔥 1支 蒜末 1小匙 <br />
調味料<br />
鹽 適量 糖 少許 七味粉 1小匙 <br />

作法<br />

備齊食材~馬鈴薯洗淨去皮後切細絲,泡入水中..沖洗個幾次,盡量將釋出的澱粉質洗掉(這樣口感才會脆)~至水變得較清澈即可,瀝乾水分備用。(若未馬上煮..可先泡在水中,加點白醋以免反黑氧化..) <br />
2 <br />
起油鍋~加入約1大匙的橄欖油爆香蒜末和一部分的蔥花.. 香氣釋出後倒入瀝乾水的土豆絲,以中大火快炒.. 並立刻灑入鹽巴和糖少許調味,再嗆少許水翻炒數下至土豆絲呈半熟狀態..最後撒入七味粉和剩餘的蔥花拌一下即可起鍋盛盤。 <br />
3 <br />
這是快炒菜,土豆絲盡量避免炒太久..以免過於熟軟而失去了爽脆的口感。
