<strong><strong><strong><strong>材料:<br />
蜆仔(帶殼)450g、日本酒1/2杯、砂糖1大匙、醬油2小匙、嫩薑1塊(約拇指第一節大小)<br />

作法:<br />
<br />
1.鍋中放入吐沙過的蜆仔和日本酒,蓋上蓋子以中火煮。沸騰後轉小火,偶爾搖晃鍋子。<br />
<br />
2.等蜆仔殼打開,取下蜆仔肉,過濾湯汁。<br />
<br />
3.鍋中放入濾過的湯汁100cc,加入砂糖、醬油、嫩薑絲後,以大火煮。嫩薑絲煮軟後,待湯汁煮出光澤就加入蜆仔。<br />
<br />
4.用橡皮刀翻攪,同時用偏強的中火煮至湯汁剩下一點點。冷卻後裝瓶,放入冰箱保存。<br />
