<br />
材料<br />
白米1杯軟絲1尾牡蠣30公克蝦米1茶匙紅蔥頭2瓣芹菜1支清水1000㏄<br />

調味料<br />
鹽1茶匙胡椒粉1/4茶匙醬油1大匙太白粉1/2茶匙<br />

作法<br />
1.白米洗淨,以等量的水浸泡30分鐘以上。&nbsp;&nbsp;<br />
2.軟絲洗淨切片;蝦米洗淨備用。&nbsp;&nbsp;<br />
3.紅蔥頭和芹菜切末。&nbsp;&nbsp;<br />
4.牡蠣洗淨,拌入太白粉,放入滾水中快速汆燙,撈起備用。&nbsp;&nbsp;<br />
5.取湯鍋,倒入作法1白米和清水,以大火煮沸後,改以小火燜煮。&nbsp;&nbsp;<br />
6.起油鍋,放入作法3的紅蔥頭末和作法2的蝦米爆香,再放入作法2的軟絲片略拌炒,並加入鹽、胡椒粉和醬油調味。&nbsp;&nbsp;<br />
7.待作法5的米湯煮至再度滾沸,米粒略化開時,加入作法6炒好的材料,再放入牡蠣和芹菜末,以大火煮至沸即可。
