材料<br />
茄子3根鮮香菇片3朵蔥段1根紅辣椒1根花生50克沙拉油200㏄<br />

調味料<br />
豆瓣醬1大匙味精1/4茶匙糖1/2茶匙太白粉1/4茶匙白醋1/4茶匙<br />
<br />
作法<br />
1.將茄子切成5公分長段;鮮香菇切斜刀片備用。&nbsp;&nbsp;<br />
2.將調味料的豆瓣醬、味精、糖、太白粉及白醋一起調勻兌成汁備用。&nbsp;&nbsp;<br />
3.熱鍋,倒入沙拉油至熱,放入作法1的茄子塊炸至軟撈起。&nbsp;&nbsp;<br />
4.同作法3鍋,轉小火放入辣椒片、鮮香菇片及蔥段快炒約半分鐘。&nbsp;&nbsp;<br />
5.於作法4鍋內放入作法1的茄子段及作法2的兌汁,轉中火一起快炒約1分鐘後加入白醋、蒜花生一起炒勻即可盛盤。
