所需材料:<br />
<strong>豬肉&nbsp; &nbsp; 400克<br />
河蟹&nbsp; &nbsp; 2只(蒸熟的)<br />
雞蛋&nbsp; &nbsp; 1只<br />
青菜&nbsp; &nbsp; 適量(我用青江菜)<br />
蔥&nbsp; &nbsp;&nbsp; &nbsp;&nbsp;&nbsp;適量<br />
姜&nbsp; &nbsp;&nbsp; &nbsp;&nbsp;&nbsp;適量</strong><br />

調味料:<br />
<strong>鹽、雞精粉、糖、料酒、太白粉各適量</strong>。<br />
<br />
做法:<br />
<strong>1、將蟹肉剝出備用,青菜洗淨,將梗與葉分開備用。<br />
2、將蔥姜切絲,取小碗放水,將蔥姜泡入,並用水擠抓成蔥姜水。<br />
3、將豬肉肥瘦分開,瘦肉先切絲,再改丁,然後剁碎。<br />
4、肥肉部分切絲後改刀成石榴粒。<br />
5、將肥瘦肉混合,分次加入蔥</strong>姜水,順一個方向攪拌,使肉吸足水分。<br />
6、加入鹽、雞精粉、少量糖、料酒、少許太白粉與一個雞蛋,順一個方向攪拌,直至肉上勁黏稠。<br />
7、將剝好的蟹肉倒入,拌勻。<br />
