<strong>牛肉........................ 一斤<br />
糖,酒.................... 一大匙<br />
薑............................ 5~6大片<br />
蒜............................ 6瓣<br />
蔥............................ 數段<br />
乾辣椒.................... 兩條<br />
辣豆辯醬................ 兩大匙<br />
花椒........................ 一茶匙<br />
八角........................ 2~3顆<br />
紅油........................ 兩大匙<br />
鹽............................ 半大匙<br />
醬油........................ 三大匙<br />
味精........................ 一茶匙<br />
高湯或水................ 6~7飯碗<br />
小白菜或青江菜.... 各少許<br />
蔥花........................ 各少許<br />
麵條........................ 適量。</strong> <br />

做法 :<br />
<strong>1.牛肉切粗塊,放入滾水中燙去血水,撈起泡洗乾淨。<br />
2.糖兩大匙,油三大匙用小火熬成糖色醬,放入牛肉,加酒後改中火翻炒均勻,加豆辯醬,紅油同炒。 <br />
3.將牛肉移入燉鍋,下高湯,鹽,醬油,薑,蒜,乾辣椒,花椒,八角,蔥段,燒開後轉小火燉煮兩小時,加味精調均即可。 <br />
4.另鍋清水燒開,放入菜稍燙後撈起;麵條抖散開入鍋煮熟,撈起放入碗裏,擺數塊牛肉,淋上湯,放進青菜,蔥花即可。</strong> <br />
