自制韓國泡菜

  <strong>材料:大白菜1大棵<br />
&nbsp; &nbsp;  可選:<br />
  白蘿蔔1個(辣白蘿蔔味很好),胡蘿蔔3個,大蔥5根,黃洋蔥一個,大蒜5個,生薑1大塊, 蘋果半個,生梨半個,韓國辣椒粉(韓國人超市有售,這一包可以做好幾大棵白菜),粗鹽,黃糖,糯米粉,魚露, 蝦醬, 柴魚粉dashi(日本人超市有售)</strong><br />
<br />
  做法:<br />
  <strong>1.大白菜去根部,對半切開,再對切,將鹽抹在每片葉子上,醃3-4小時(甚至過夜),擠掉水分.<br />
  2.大蒜剝皮搗成泥,生薑擦成薑末.蘋果,生梨去皮剁成泥,白蘿蔔,胡蘿蔔,大蔥,洋蔥切條備用.<br />
  3.將少許糯米粉倒入小鍋,加少量水,加熱攪拌至粘稠,加入蒜泥,薑末,辣椒粉,粗鹽,黃糖,魚露,蝦醬,柴魚粉攪拌均勻,做成醃料.<br />
  4.拌入白蘿蔔,胡蘿蔔,大蔥,洋蔥,拌勻.<br />
  5. 將醃料塗抹在白菜葉子上,容器密封,室溫放一天入味,再放入冰箱,五天後食用(自家吃的就不用講究形色,基本就是亂碼一氣了)</strong>.<br />
