<strong>主料:絲瓜半根<br />
輔料:雞蛋白(雞蛋清)適量 雞蛋黃適量<br />
調料:色拉油適量 食鹽適量 蒜適量 料酒適量</strong><br />

玉樹瓊苞堆雪的做法<br />
<strong>1.雞蛋白自然解凍後,加入一個鹹蛋白攪拌均勻,鹹蛋白很鹹,不用再加鹽。鹹蛋黃用料酒浸泡20分鐘去腥<br />
2.攪拌蛋白會產生一些白色泡沫,用勺子去除乾淨,放入開水鍋中,小火蒸約10分鐘至蛋白完全凝固<br />
3.絲瓜半根(現在的絲瓜超大)去皮、切段,用手指把中間的瓤略按凹下去,炒鍋加油爆香蒜蓉至蒜蓉呈微黃色,加少量鹽。鹹蛋黃倒去料酒,分成若干小塊<br />
4.依次把爆香的金蒜蓉和鹹蛋黃放在絲瓜中間,再把絲瓜擺在凝固的蛋白上,水開後放入蒸鍋,中小火蒸5分鐘左右</strong><br />
