  <strong>主料:鴨腸1盤<br />
  輔料:芹菜2根<br />
  調料:姜1塊 蒜3瓣 剁椒2勺 郫縣豆瓣醬1勺 植物油適量</strong><br />
<br />
  酸辣鴨腸的做法<br />
  <strong>1.鴨腸加鹽與醋揉洗後用清水沖洗三到四次(要除去腥味,用鹽與醋結合來洗清除得比較乾淨的),然後切成十公分左右的段<br />
  2.姜切成細絲,蒜切成片;芹菜切成段備用<br />
  3.鴨腸在炒之前用水焯一下,焯的時候注意時間,看到鴨腸稍一捲起,顏色變白時,迅速撈出入涼水中<br />
  4.鍋裡放油,可以適當多點,燒熱後放入姜蒜炒出香味,加入1勺郫縣豆瓣炒出紅油<br />
  5.放入2勺剁椒翻炒,(因為這個剁椒是我自已做的,味道屬於酸辣型)所以待剁椒炒出那股酸辣味後,把焯過水的鴨腸倒進鍋裡迅速翻炒均勻<br />
  6.最後把芹菜放入,根據自已的口味輕重加適量的白糖與鹽,炒勻後出鍋<br />
