蔥香羊肉麵:<br />
<br />
<strong>原料:羊肉100克,切面300克,小油菜2、3棵<br />
調料:大蔥半根,鹽、料酒、醬油、蚝油、薑末、胡椒粉、糖、色拉油各適量</strong><br />
<br />
做法:<br />
<strong>1. 羊肉切成小塊,加 鹽、料酒、醬油、蚝油、薑末、胡椒粉、糖、色拉油醃製上;<br />
2. 小油菜洗淨備用,大蔥切成段;<br />
3. 熱鍋入油燒熱,放入肥羊肉煸炒至出油;<br />
4. 加入蔥段爆香;<br />
5. 放入醃好的羊肉大火翻炒至變色,稍頓煮一會兒;<br />
6. 填入適量湯水燒開;<br />
7. 將切面表面的防粘生粉沖掉;<br />
8. 放羊肉湯裡面煮熟,加鹽調味;<br />
9. 油菜如沸水鍋裡,少加點鹽和油燙熟;<br />
10. 將麵條盛入大碗,加上羊肉湯,放上焯好的小油菜即可。</strong><br />

美食心得:<br />
<strong>1. 羊肉選取肥瘦相間的比較好吃,肥的部分先炒出油再煮湯,香味濃郁;<br />
2. 將羊肉事先醃製上會更入味;<br />
3. 怕羊肉炒不爛,可以利用醃肉的湯汁稍燉一會兒再填湯;<br />
4. 將切面上的防粘粉沖洗掉可以保持湯清不混濁;<br />
5. 喜歡辣的吃的候調上油辣子更過癮。</strong><br />
