<br />
材料<br />
雞胸肉80公克魚漿300公克腐皮2張蔥花15公克香菜末10公克馬蹄10個地瓜粉20公克水50㏄麵糊適量<br />

調味料<br />
糖1大匙胡椒粉1/4小匙五香粉少許<br />
<br />
醃料<br />
米酒少許醬油少許糖少許<br />
<br />
作法<br />
1.雞胸肉洗淨切條狀,再加入所有醃料拌勻,醃漬約5分鐘,備用。&nbsp;&nbsp;<br />
2.馬蹄去皮洗淨、拍扁切細;地瓜粉與水混合調勻,備用。&nbsp;&nbsp;<br />
3.魚漿加入所有調味料,再加入作法2的地瓜粉水、馬蹄碎、蔥花、香菜末,攪拌均勻。&nbsp;&nbsp;<br />
4.腐皮切成6小張,備用。&nbsp;&nbsp;<br />
5.取一張作法4的腐皮,鋪入適量作法3的魚漿,中間再放上適量作法1的雞胸肉條後捲起,封口處抹上適量麵糊包裹緊(重複此步驟至材料用畢,共可包6條)。&nbsp;&nbsp;<br />
6.熱油鍋,放入作法5的雞捲,以中小火炸熟至上色,再轉大火炸至金黃酥脆,撈出瀝乾油份後切片即可(食用時可依個人喜好,另搭配蕃茄醬沾食增加風味)。
