材料<br />
鴨1隻滷包:草果1顆八角8公克甘草10公克陳皮10公克花椒5公克香葉3公克<br />

調味料<br />
水1500㏄醬油500㏄蔥3根薑20公克冰糖250公克米酒100㏄<br />
<br />
作法<br />
1.將滷包材料放入棉布袋中包成滷包。&nbsp;&nbsp;<br />
2.鍋燒熱,倒入約4大匙沙拉油,放入拍鬆的蔥、薑以中小火爆香,炒至金黃微焦後取出放入湯鍋中。&nbsp;&nbsp;<br />
3.在作法2的鍋中放入其他調味料和作法1的滷包,開火煮滾後放入鴨子續煮。&nbsp;&nbsp;<br />
4.待作法3的湯鍋再度煮開後轉小火,不加蓋以小火持續煮滾,並不時翻動鴨身使其受熱均勻。&nbsp;&nbsp;<br />
5.待作法4的醬鴨煮至湯汁蒸發收乾至濃稠狀,即可切塊食用。
