材料<br />
金針筍150公克嫩豆腐100公克魚片100公克胡蘿蔔30公克黑木耳30公克薑20公克高湯700cc水1000cc沙拉油1大匙<br />

調味料<br />
A.鹽1小匙雞粉1/2小匙米酒1/2大匙<br />
B.胡椒粉少許香油少許<br />
<br />
作法<br />
1.金針筍洗淨切段;嫩豆腐切塊;胡蘿蔔、薑切片;黑木耳洗淨切片備用。 <br />
2.取一湯鍋,倒入水煮滾後,放入魚片汆燙30秒,撈出備用。 <br />
3.熱鍋,倒入沙拉油燒熱,放入作法1的薑片爆香後,倒入高湯、作法1的豆腐塊、胡蘿蔔片、黑木耳片煮至滾沸。 <br />
4.於作法3的鍋中續放入作法1的金針筍段及調味料A煮至約1分鐘後,放入作法2的魚片煮熟,最後加入胡椒粉、香油即可。
