★材料:刈菜梗1個、泡好的白木耳1小碗、紫山藥1小碗、地瓜1小碗、鴻喜菇1包、栗子12個、海鹽少許、苦茶油1匙、麻油1匙、胡椒粉少許<br />
<br />
★作法:<br />
<br />
1.刈菜、紫山藥、地瓜都切成條狀,白木耳撕成小朵,備用。<br />
<br />
2.起熱鍋,入苦茶油,再依序放入地瓜、山藥、鴻喜菇、刈菜梗,加水煮滾後,蓋鍋約2分鐘。<br />
<br />
TIPS:在鍋中要固定位置,不要翻炒。<br />
<br />
3.入白木耳於鍋中食材的正中央,再用藕粉勾薄芡。<br />
<br />
4.起鍋前淋上麻油、胡椒粉即可。<br />
<br />
TIPS:盛盤時,要用有深度的大盤,鍋中食物要輕輕推放,不要亂了原有的模樣。<br />
<br />
★達人說:有綠、金黃、有紫、有白,顏色多彩多姿、口味也多層次,好像不能同時放在一起的食材,卻意外出現美好滋味;是打破觀念的一道創意菜。<br />
