棗香十足,鬆軟可口<br />
<br />
材料<br />
<strong>黃油40g,低粉60g(中粉50g+玉米澱粉10g),牛奶50ml,阿膠棗50g,雞蛋4個,紅糖50g,砂糖10g,檸檬汁幾滴</strong><br />
<br />
做法<br />
<strong>1 阿膠棗去核,切碎,製成棗泥。<br />
2 黃油,糖,棗泥加入鍋中小火融化黃油,攪拌均勻。<br />
3 關火,逐個加入4個雞蛋黃,牛奶,攪拌成糊狀,篩入麵粉,切拌均勻。<br />
4 4個蛋白用電動打蛋器打成粗泡,加入檸檬汁,打至9分發。<br />
5 將1/3的蛋白加入黃油麵中,切拌均勻後,加入剩下的蛋白,切拌均勻<br />
6 將製備好的糊狀物倒入模具中,隔水加熱170度35分鐘</strong><br />
<br />
小訣竅<br />
<strong>由於這次是自己將阿膠棗切碎製成的棗泥,不夠細膩,所以有一些大顆粒的棗沈在了底部,活像是重奶酪蛋糕的餅乾層,呵呵,下次可以嘗試減少棗泥的用量。<br />
黃油麵這部分少顯粘稠,可以加入少量的牛奶調節。<br />
糖量我已經減了,不過我媽還是覺得有點甜,所以不喜歡那麼甜的童鞋可以再減些糖量。</strong><br />
