  <strong>主料:北豆腐300克,蝦300克<br />
  調料:食鹽適量,雞精1/2小勺,蔥1/2大勺,姜1/2小勺,香油1小勺,澱粉適量,水澱粉1/2小勺,魚子醬適量,雞湯1/2小碗,雞蛋1個,白胡椒粉2/3小勺,江米酒1小勺,植物油2大勺</strong><br />

  兜福蝦蓉夾的做法<br />
  <strong>1.豆腐去掉硬皮,切成寬約1.5釐米,長約2釐米,厚約0.5釐米的片,以片片擺在盤中,均勻的撒入適量鹽,醃15分鐘<br />
  2.鮮蝦去殼,去腸泥,洗淨後剁成泥蓉<br />
  3.蝦蓉放入容器中,加入蔥薑末、鹽、胡椒粉、米酒、香油拌勻<br />
  4.醃好的豆腐片兩面薄薄的沾一層干澱粉<br />
  5.取適量蝦蓉均勻的抹在豆腐片上<br />
  6.上面再蓋上另一片沾了澱粉的豆腐,依次做好所有的豆腐夾<br />
  7.雞蛋打散,平底鍋燒熱放油,將做好的豆腐夾裹上蛋液<br />
  8.放入平底鍋中,用小火將豆腐夾兩面煎至金黃,然後倒入約1/2小碗的清雞湯,蓋上鍋蓋燜約2-3分鐘<br />
  9.然後把豆腐夾盛出碼盤<br />
  10.鍋中剩餘的雞湯加入適量鹽和雞精調味,再倒入適量水澱粉勾薄芡<br />
  11.把做好的芡汁澆在豆腐夾上<br />
  12.上面放適量魚子醬,撒幾個香蔥圈作
