食材 <br />
食材:豆腐皮 3張 蝦仁 240g 絞肉 180g 荸薺 100g 洋蔥丁 80g 蔥花 20g 胡蘿蔔末 40g 蒜酥 1大匙 太白粉 2小匙 蛋 1顆 <br />
調味料:鮮雞晶 2小匙 胡椒粉 1/2小匙 糖 2小匙 香油 2小匙 米酒 1大匙 抹腐皮水: 麵粉1大匙+水1/3杯調勻<br />

作法<br />

蝦仁剁成丁狀,荸薺拍碎 <br />
2 <br />
所有食材加入調味料先抓勻,然後攪拌至有黏性(或以電動調理棒打蛋器代勞) <br />
3 <br />
腐皮每張剪對半,三角尖向外,每捲取內餡約130g放腐皮上,捏成長型 <br />
4 <br />
腐皮邊緣刷上麵粉水,將內餡捲成長條,並且灑地瓜粉沾勻備用 <br />
5 <br />
炸油加溫至約100度,小火將蝦捲炸熟(約5~6分鐘),撈起,將油加溫再回炸30秒即成 <br />
6 <br />
切斜片排盤,蘸梅子醬食用尤佳 <br />
