材料<br />
鱸魚1條西芹150克紅蘿蔔50克油200㏄<br />

調味料<br />
太白粉1茶匙鹽1小匙薑汁燒肉醬150克<br />

作法<br />
1.鱸魚洗淨去骨,切成長5公分、寬2公分條狀;西芹洗淨削皮、撕絲,切成菱形;紅蘿蔔洗淨,切成菱形備用。 <br />
2.將作法1的鱸魚以太白粉、鹽抓勻;將作法1的西芹、紅蘿蔔汆燙1分鐘撈起。 <br />
3.起一油鍋,加熱至160℃,放入作法2的鱸魚,以火炸約1分鐘,撈起瀝淨油份備用。 <br />
4.另起一鍋,放入薑汁燒肉醬、西芹塊、紅蘿蔔塊,以火煮滾,放進作法3炸好的鱸魚肉,以火炒約1分鐘,撈出即可。
