<br />
材料<br />
A.蘿蔔1/2條鮮蚵150公克韭菜20公克<br />
B.蛋3顆鹽少許胡椒少許酒1小匙<br />
C.味噌1大匙味醂1大匙蠔油1/2大匙蔥末10公克薑末1小匙<br />
D.沙拉油適量<br />

作法<br />
1.將蘿蔔削皮磨成泥,將鮮蚵放入蘿蔔泥中,輕輕洗除鮮蚵表面黏膜,再輕輕用水洗淨並瀝乾;韭菜洗淨,切成1公分的形狀備用。 <br />
2.將蛋打散,與其他材料B混合均勻,再加入作法1的韭菜末拌勻成蛋液。 <br />
3.將味醂與味噌混合均勻,再與蠔油拌勻備用。 <br />
4.鍋中倒入沙拉油加熱,放入蔥末、薑末以大火爆香,轉中火將作法3加入略拌炒均勻,放入作法1的鮮蚵炒至8分熟,盛起瀝乾多餘水分備用。 <br />
5.平底鍋倒入沙拉油加熱,倒進作法2,以中火用筷子邊煎邊攪動,煎至半熟時,轉小火,將作法4的鮮蚵均勻散放在蛋上,翻面,不時搖動鍋身,兩面煎至金黃色即可裝盤。
