&nbsp; &nbsp;&nbsp;&nbsp; <strong>原料:蕃茄、豆皮、絲瓜、蟹味菇<br />
</strong><br />

  做法:<br />
<br />
  (1) 蟹味菇切去根蹄,洗乾淨待用。<br />
  (2) 絲瓜洗乾淨擦乾水分,刨皮切滾刀塊待用。<br />
  (3) 番茄洗乾淨,切塊待用。<br />
  (4) 豆皮挑選略微厚一些的,南方有一種豆腐衣不能用太薄。剪刀剪成小方塊,入油鍋中略微炸一下,炸成金黃色待用。<br />
  (5) 淨鍋內加入精製油,大火加熱至四成熱,倒入蟹味菇、絲瓜大火滑油,出鍋瀝乾油分。<br />
  (6) 起鍋,倒入少許精製油,爆香薑末,放入番茄塊煸炒,炒致略微成醬狀,加水放油炸過的豆皮、蟹味菇,略微煮一會兒調味加鹽、蘑菇精(代替味精)勾一點點薄芡,放入絲瓜拌勻出鍋裝盤即可。<br />
