材料<br />
帶骨雞胸肉1/2塊地瓜粉2杯蜜汁醬適量炸油適量<br />

醃料<br />
A.蔥2根薑10公克蒜仁40公克水100㏄B.五香粉1/4茶匙糖1大匙味精1茶匙醬油膏1大匙小蘇打1/4茶匙米酒2大匙<br />
<br />
作法<br />
1.雞胸肉去皮,從雞胸肉側面中間橫剖到底,但不要切斷,成一大片。&nbsp;&nbsp;<br />
2.將蔥、薑、蒜仁一起放入果汁機中加入水打成汁。&nbsp;&nbsp;<br />
3.將作法2打好的汁用濾網將渣渣濾掉。&nbsp;&nbsp;<br />
4.在作法3加入所有醃料B,拌勻後成醃汁。&nbsp;&nbsp;<br />
5.將作法1的雞排放入作法4的醃汁,蓋好後放入冰箱冷藏,醃約2小時。&nbsp;&nbsp;<br />
6.將作法5醃好的雞排取出,放入地瓜粉裏用手掌按壓讓粉沾緊。&nbsp;&nbsp;<br />
7.將作法6的雞排翻至另一面,同樣略按壓後,拿起輕輕抖掉多餘的粉,再靜置約1分鐘使粉回潮。&nbsp;&nbsp;<br />
8.熱一鍋油至180℃,放入作法7的雞排,炸約2分鐘至表面金黃起鍋瀝乾油。&nbsp;&nbsp;<br />
9.用毛刷沾蜜汁醬塗至作法8的雞排上,再放至烤爐上烤,至香味溢出後翻面再烤。烤雞排再塗上一層蜜汁醬,繼續烤至略焦香後即可。
