食材 ( 8 人份 ) <br />
帶殼鮮蝦 400g 蔥 2根 薑 3片 酒 適量 <br />

A<br />
當歸 2片 紅棗 5個 枸杞 1大匙 水 600g <br />

B<br />
紹興酒 300g 鹽 1小匙 糖 半小匙 <br />

作法<br />
1 <br />
把A放入鍋中,煮15分鐘,放涼再加B,放入冷藏。 <br />
2 <br />
蝦子剪去尖刺、鬚,除去腸泥。 <br />
3 <br />
水放入蔥薑酒,水滾放入蝦煮2-3分,撈起泡冰水。 <br />
4 <br />
蝦子放入冷藏的湯汁中,冷藏1-2天入味即可。 <br />
