材料:高筋麵粉84g、新鮮酵母3.4g、低筋麵粉36g、全蛋18g、糖12g、牛奶12g、鹽2.4g、水47g、奶粉4.8g、奶油18g、麥芽精0.2g、法蘭克福香腸4條<br />
<br />
作法:<br />
<br />
1.除奶油外,其餘入缸(攪拌機),慢速拌勻後,以快速拌至半收半黏缸狀態。<br />
<br />
2.加入奶油,慢速拌勻後,以快速拌至不黏缸、光滑有平整薄膜。<br />
<br />
3.麵團放入容器中,進行基本發酵80分鐘後,取出上下對折,左右對折後,再發酵20分鐘。<br />
<br />
4.將麵團分割為每個60g(共4個),搓圓,中間發酵20分鐘。<br />
<br />
5.麵團搓成橄欖形,蓋塑膠布,進行最後發酵50分鐘。<br />
<br />
6.烤箱預熱210度;麵團表面上蛋水,將香腸放至中間往下壓,可擠少許沙拉醬和Pizza絲。<br />
<br />
7.入爐210度/11分鐘。出爐後,可撒少許乾蔥末。<br />
