材料:高筋麵粉137g、鹽0.5g、低筋麵粉15g、全蛋38g、酵母1.2g、牛奶70g、糖15.2g、奶油15.2g <br />
<br />
椰子餡:糖40g、葡干16g、蛋24g、椰蓉40g、奶油g <br />
<br />
作法:<br />
<br />
1.除奶油外,全材入缸(攪拌機)慢速拌勻後,轉快速拌至不黏缸。<br />
<br />
2.加入奶油,慢速拌勻,再以快速拌至光滑有薄膜。<br />
<br />
3.將麵團放入容器中,進行基本發酵60分鐘。<br />
<br />
4.完成發酵的麵團,分割成每個約70g(4個),搓圓後,以塑膠布覆蓋,中間發酵20分鐘。<br />
<br />
5.將椰子餡材料全拌勻,分成每個35g(4個)。<br />
<br />
6.取出麵團,包入椰子餡,收口朝下,以桿麵棍上下桿開,成為牛舌狀,再將麵團由下往上對折,再由右往左對折成為扇形,以刮板在中間切開,尾端不要切斷,前端微外翻。<br />

7.蓋上塑膠布,進行最後發酵50分鐘,烤箱預熱170度。<br />
