夏日的爽口細粉

爽口冬粉(攝影:連黎/大紀元)<br />
<br />
<strong>材料:</strong><br />
<br />
冬粉一把 (先泡軟,開水中煮熟放入冰水中備用)<br />
<br />
香菇一朵 (先泡軟,少許醬油,糖,水,電鍋蒸熟備用)<br />
<br />
雞蛋一個攤成一張薄餅,再切細絲<br />
<br />
熟火腿片 切絲<br />
<br />
雞胸肉先在滾水煮熟取出入冰水後用手撕成絲狀<br />
<br />
黃瓜一條 一分三,切成同等絲狀<br />
<br />
紅蘿蔔開水川燙後切細絲備用<br />
<br />
<strong>醬汁:</strong><br />
<br />
白水500cc,加上柴魚,泡香菇水,醬油一大匙,糖小半匙,鹽小半匙,煮滾,漏去柴魚渣, 放冷,成冷汁備用<br />
<br />
佐料:蒜末、辣椒末、青蔥末、芝麻各少許<br />
<br />
<strong>做法: </strong><br />
<br />
1、取一只飯碗,先將熟香菇面朝底部,分五等份將五色絲狀排整齊。<br />
<br />
2、粉絲自冰水中取出瀝乾,放在碗中間壓緊,填滿,取一只大碗盤,蓋住倒扣出來。<br />
<br />
3、蔥、蒜、辣椒、芝麻末等灑上,醬汁淋入盤中,湯汁要多才好,將五色絲拌勻,即完成了這道夏日爽口的細粉了。<br />
<br />
<strong>備註:</strong><br />
<br />
1、改用細麵條也行,唯麵條煮好後一定要在冷水中洗去粘性,成為清爽的麵條,再放入冰水中備用。<br />
<br />
2、醬汁可多做一些,隨時煮點麵條,加上佐料也很可口呢!<br />
<br />
3、可採日式口味,放些哇沙米及海苔絲及芝麻粒。<br />
<br />
4、可採泰式口味,加檸檬汁,紅辣椒,香菜末,糖為酸甜辣。<br />
<br />
5、可採中式芝麻醬涼麵方式呈現,外加蝦米末,大蒜末均可。
