糖醋雞塊(攝影:連黎/大紀元)<br />
<br />
<strong>材料:</strong><br />
<br />
雞胸肉(雞里肌肉)一斤<br />
紅、黃椒各半個,切塊狀<br />
蔥、薑各少許<br />
雞蛋一個<br />
地瓜粉少許<br />
<br />
<strong>醬汁:</strong><br />
<br />
番茄醬三大匙<br />
醋三大匙<br />
糖三大匙 <br />
少許水(1.5大匙)<br />
<br />
<strong>作法:</strong><br />
<br />
1.雞胸肉切成塊狀用白胡椒、鹽、酒各少許,打一個雞蛋在內,先醃10分鐘。<br />
<br />
2.醃妥的雞塊放入地瓜粉上薄薄的裹上一層,拍掉多餘的粉,放置10分鐘使其回軟。<br />
<br />
3.用半鍋油燒至6分熱,竹筷插入油中筷尖冒小泡時,即可將雞塊一塊塊放入,轉成中火,炸成金黃色取出,油鍋再燒到大熱時,雞塊再全部下鍋,再炸酥時即可取出。<br />
<br />
4.鍋中油倒出,鍋中之餘油將蔥、薑先爆香,紅、黃椒塊下鍋炒熟,醬汁倒入,炒均勻,雞塊倒入與醬汁融合即可完成了。<br />

<strong>備註:</strong><br />
<br />
1.做法可改成小排骨,豬里肌塊,梅花肉塊,花枝等…。<br />
2.素食者可用麵筋炸酥,甜酸醬汁淋上,同樣美味可口。<br />
