乾炸旗魚(攝影:連黎/大紀元)<br />

<strong>材料:</strong><br />
<br />
旗魚片六片<br />
雞蛋一個<br />
白胡椒少許<br />
酒一茶匙<br />
鹽少許<br />
地瓜粉少許<br />
<br />
<strong>醬汁:</strong><br />
<br />
蕃茄醬一湯匙<br />
醋一湯匙<br />
糖一湯匙<br />
<br />
<strong>做法:</strong><br />
<br />
1.旗魚片先用酒、白胡椒、鹽先醃10分鐘<br />
<br />
2.二個容器分別 A.雞蛋打散 B. 地瓜粉<br />
<br />
3.醃好的旗魚先在蛋汁中雙面都沾上蛋汁<br />
<br />
4.再放到地瓜分中薄薄的裹上一層粉,擱上5-10分鐘<br />
<br />
5.起熱油鍋,中小火放入旗魚片,炸到用筷子能穿透,轉大火炸至金黃色即可<br />
<br />
<strong>備註:</strong><br />
<br />
A.可趁熱以乾炸得香噴噴的食用。<br />
<br />
B.可用一茶匙油,將醬汁加入少許地瓜粉煮滾,成稠狀,澆在魚片上成糖醋魚。<br />
<br />
C.也可將煮熟的醬汁作為沾料,沾著用也都不錯呀。
