【祝大姐簡易家常菜】自己動手做鹹豬肉

鹹豬肉(攝影:祝大姐/大紀元)<br />
<br />
<strong>材料:</strong><br />
<br />
1.五花豬肉二條 (最好肥瘦均勻)<br />
2.青蒜一支<br />
3.梅子醋<br />
4.蒜末<br />
<br />
<strong>炒的醃料:</strong><br />
<br />
1.花椒一湯匙<br />
2.黑胡椒一茶匙<br />
3.鹽三小匙 (視肉的大小)<br />
<br />
<strong>抹的醃料:</strong><br />
<br />
1.五香粉少許(一小茶匙) <br />
2.生蒜末一大湯匙(不用炒)<br />
3.糖一湯匙<br />
<br />
<strong>燻料:</strong><br />
<br />
紅茶包二個,米一小把,黃砂糖一大湯匙。<br />
<br />
<strong>做法:A</strong><br />
<br />
1.炒菜鍋不需放油,燒熱,將醃料炒香。 <br />
2.豬肉用醃料塗抹均勻。<br />
3.蒜末也塗抹均勻。<br />
4.用塑膠袋綁緊,放入冰箱冷藏醃1-2天。<br />
<br />
<strong>做法:B</strong><br />
<br />
1.二天後取出,清水略洗去醃料後,入鍋中蒸熟(約30分鐘)。<br />
2.乾鍋燒熱,錫箔紙鋪在鍋內,茶葉,米,糖拌勻,加上蒸架,將已蒸熟的鹹豬肉放在架上,中大火燻2分鐘略為上色,翻個面再燻1分鐘即可取出。<br />
3.經燻過後顏色美觀,增加了香氣,切成0.5公分片狀,切一根青蒜片,梅醋加點蒜末(解膩)來陪襯,倒是一道不錯的菜餚呢!<br />

<strong>備註:</strong><br />
<br />
如醃得太鹹,於蒸前用清水多洗一下,減其鹹度,略鹹即可,也不能太淡,到底是鹹豬肉嘛!<br />
