食材 ( 2 人份 ) <br />
花枝(中卷) 2隻 青蔥 10根 豆豉 1匙 蒜末 1匙 玄米油 2匙 烏醋 1小匙 九層塔 適量 <br />
<br />
醬汁<br />
蠔油、味醂、醬油 2:1:1匙<br />
<br />
作法<br />
1 <br />
調醬汁:蠔油2匙、味醂1匙、醬油1匙調勻備用 <br />
2 <br />
汆燙豆豉:用70度以上熱水汆燙豆豉去鹹後撈起備用 <br />
3 <br />
中卷過油:水滾下1小匙鹽後關火將中卷汆燙5秒撈起、並隨即過160度以上熱油15秒後撈起備用 <br />
4 <br />
爆香:鍋熱下油、(步驟2之)豆豉、蔥段炒熟(約需2分鐘) <br />
5 <br />
快炒:下辣椒、(步驟3之)中卷、蒜末、(步驟1之)醬汁2、烏醋、九層塔拌炒均勻後起鍋 <br />
