食材:去皮去骨雞腿肉4隻(約530克,切1吋方塊)、番茄1大顆切塊、洋蔥1大顆切塊、蒜瓣2顆切碎末、九層塔1小把去梗、冷壓蔬菜油2大匙、醬油2大匙、魚露1大匙、初榨椰糖或任何天然糖蜜 1小匙、海鹽1/2小匙、萊姆汁1大匙、現磨胡椒少許<br />

作法:<br />

1.雞肉用1大匙冷壓油、1大匙醬油和少許現磨胡椒醃個20分鐘。<br />
<br />
2.炒菜鍋用中大火加熱,加1大匙油炒香蒜末後,加入醃好的雞肉塊炒至半熟,約3-4分鐘。續加入洋蔥和蕃茄塊拌炒,以剩下的一大匙醬油、魚露、椰糖和海鹽(記得魚露和醬油都鹹,別下重手)調味,煮到番茄出汁、洋蔥稍軟。起鍋前再淋上萊姆汁,拌入九層塔即可。 <br />
