<br />
食材:長茄4條以滾刀斜切成立體長塊、蒜末1-2瓣(可省)、新鮮羅勒2枝、葡萄籽油或有機芥花籽油適量(油煎用)<br />
<br />
味噌蒜泥醬:糙米味噌2大匙、100%白芝麻醬1大匙、過濾水4大匙、蒜末3瓣、楓糖漿1又1/2小匙、萊姆或檸檬汁數滴<br />
<br />
作法:<br />
<br />
1.取一小碗混合拌勻所有醬汁食材。<br />
<br />
2.平底不沾鍋注入少許油,中大火加熱,分批將茄塊兩面煎黃上色(可蓋鍋蓋加速茄子軟化,但別煎過頭而太軟爛),以少許海鹽(還有醬汁,不要加足)和現磨胡椒調味。喜歡吃溫熱的,可將煎好茄子置於低溫烤箱保溫。<br />

3.煎好茄子排盤後,淋上味噌蒜泥醬,灑上現切蘿勒碎即可。喜歡辛辣的,再灑點蒜末,口味更有層次。<br />
