材料:老薑 適量 <br />
蒜頭 6粒 <br />
白蝦 800g <br />
<br />
調味料:<br />
胡椒粉 少許 <br />
米酒 3大匙 <br />
鹽 少許<br />
<br />
作法:(1)將白蝦洗淨,用牙籤挑去腸泥、剪去長鬚及蝦頭前方的硬刺。<br />
(2)蒜頭及老薑切碎末,備用。 <br />
(3)起一油鍋,油熱倒入做法1的白蝦,快速爆炒至熟透(蝦殼轉紅)為止,撈出備用。 <br />
(4)利用原鍋的油,將做法2的碎末倒入鍋中爆香。 <br />
(5)最後,再加入做法3的白蝦及所有調味料,轉大火炒至湯汁收乾即可。 <br />
