綿細滑口的燜冬瓜老少鹹宜(圖:林秀霞/大紀元)<br />
<br />
<strong><font color="#556b2f">材料:</font></strong><br />
<br />
冬瓜1塊(約600克)、鮮香菇3朵、嫩薑4-5片、蔥末適量。<br />
<br />
<strong><font color="#556b2f">調味料:</font></strong><br />
<br />
高湯或水500cc、蠔油2大匙、鹽、酒及糖各適量。<br />
<br />
<strong><font color="#556b2f">做法:</font></strong><br />
<br />
1、鮮香菇洗淨切塊。<br />
<br />
2、冬瓜去皮切片後用電鍋(外鍋加1/3杯的水)蒸熟。<br />
<br />
3、熱油鍋,放薑、蔥末炒香,再放各種調味料、鮮香菇及冬瓜(水要淹過冬瓜),蓋上鍋蓋,以中火燜煮,過程中要稍微翻炒兩次(食材才不會粘鍋且入味均勻),燜至汁收乾入味即成。
