紅豆蓮藕涼糕是仲夏清涼的甜點聖品(圖:林秀霞/大紀元)<br />
<br />
<strong><font color="#ff8c00">材料:</font></strong><br />
<br />
蓮藕粉100克、砂糖50克、紅豆泥200克、椰子粉適量。<br />
<br />
<strong><font color="#ff8c00">作法:</font></strong><br />
<br />
1、將150CC的水煮滾,蓮藕粉加入100CC冷水拌勻後倒入滾水中,快速攪拌成黏糊狀的粉漿。<br />
<br />
2、容器內先抹少許油以利脫模,將一半粉漿倒入容器內鋪平後,先蒸5分鐘後取出。<br />
<br />
3、將紅豆泥鋪在蒸過的粉漿上,再將另一半粉漿倒在紅豆泥上後,繼續蒸熟約須25分鐘。<br />
<br />
4、待涼後放進冰箱一天,就可取出脫模後切成塊,灑上椰子粉(可隨個人喜好選用花生粉或熟太白粉)即可食用清涼又Q軟的甜點。<br />
<br />
5、餡料(可依個人喜好選用紅豆泥、綠豆泥或芋頭泥)可加1匙的粉漿拌勻,在切成塊時紅豆泥較不易散開。<br />
