抹茶奶油車輪餅

奶油&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;20公克<br />
B.全蛋&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp;&nbsp;100公克<br />
細砂糖&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp;&nbsp;40公克<br />
煉乳&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;50公克<br />
C.玉米粉&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp; 30公克<br />
抹茶粉&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp;&nbsp;3公克<br />
D.糖漬栗子&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp; 8顆<br />
E.日式餅皮麵糊&nbsp; &nbsp;&nbsp; &nbsp;&nbsp;&nbsp;適量<br />
<br />
【做  法】<br />
<br />
1.將材料A混合以小火煮至85℃後熄火。<br />
<br />
2.將材料B放入鋼盆中,用直型打蛋器拌打均勻,加入材料C拌勻,再慢慢加入作法1拌勻。<br />
<br />
3.將作法2以隔水加熱的方式,開中小火一邊攪拌一邊煮至呈膠凝狀,再將事先切碎的材料D加入拌勻即成抹茶奶油餡。<br />
<br />
4.將烤模放在爐上以小火均勻烤熱後,用抹油棒塗抹上一層薄薄沙拉油,倒入日式餅皮麵糊至烤模凹朝內(約5分滿)。<br />
<br />
5.待作法4烤模凹槽接觸面的麵糊稍微凝固後(但中間的麵糊仍成糊狀),用桿麵棍旋開麵糊,待麵糊冒出孔洞稍膨脹後,即可填入適量作法3的抹茶奶油餡。<br />
<br />
6.待作法5的麵糊略乾後,將日式餅皮麵糊倒至另一個凹槽內(約4至5分滿),等麵糊成形即為底部(但中間的麵糊仍帶點糊狀),用尖錐挑起作法5帶餡的半邊車輪餅,快速蓋在底部上面,以小火繼續燒烤至兩面均上色,且能輕易脫模不沾粘即可。
