  三:豆角小燉肉<br />
<br />
  原料:豬後肘肉,土豆,豆角<br />
<br />
  做法: <br />
<br />
  1、首先給肉上漿,將肘肉洗淨,切二厘米見方的塊,放入盆中,加入適量鹽,雞精,胡椒粉,醬油,五分之一左右的水,用手抓勻,醃製30分鐘後,加入一個全蛋液,抓勻後,繼續醃15分鐘左右,加入適量澱粉,抓勻,然後加一點油,抓勻後,封好保鮮膜,放冰箱裡冷藏<br />

  2、土豆切滾刀塊,豆角洗淨去蒂,掰成小段<br />
<br />
  3、鍋中入稍多油,燒熱後,依次加入土豆,豆角過油後撈出<br />
<br />
  4、鍋中留底油,下處理好的肉,滑散,斷生後撈出<br />
<br />
  5、另起鍋,加入一點油,爆香蔥姜蒜,八角,加入肉,料酒,翻炒一會後,加入足量的水,大火燒開轉小火燉15分鐘左右,加入土豆和豆角,繼續燉至熟<br />

  6、調入鹽,醋,醬油,雞精,香油,香菜,出鍋<br />

  四:酸豆角炒肉末<br />

  豬肥膘肉25克,漿蝦仁50克。精鹽1克、味精1.5克、醬油10克、醋10克、紹酒10克、白糖10只、蛋清1個。蔥白末5克、薑汁水10克、干澱粉25克、濕澱粉5克、芝麻油10克、熟豬油40克。 <br />

  1、選用7厘米長的青椒24只,用剪刀通開,去盡子,椒內撒干澱粉。[美食中國]<br />

  2、將裡脊肉、肥膘、蝦仁剁成泥,加水、蛋清、精鹽、味精、薑汁水、蔥白末用手抓上勁,拌以濕澱粉,再加芝麻油5克攪勻,分成24份,釀入青椒,抹平。<br />

  做法:1.蘿蔔乾用溫水泡軟,大約一刻鐘就好,切成丁備用;干紫蘇用溫水泡發;紅椒切成小丁;2.熱鍋放油快速倒入肉末翻炒(熱鍋涼油炒肉不粘鍋),隨後加紅椒、蒜末、紫蘇翻炒出香味後再加入蘿蔔乾,大約翻炒2-3分鐘,中途可以略加水,最後加醬油、鹽調味,炒勻即可.<br />

  七:山珍豆腐<br />

  (豆腐是前天剩下的半塊,絲瓜還是樓下的老太太給的)<br />

  做法:豆腐、絲瓜切塊擺盤,撒上蒜末、鹽,牛肝菌帶油一併淋在豆腐上,最後澆上蒸魚豉油,上鍋蒸15分鐘就可以啦.我主要是為了打發掉油牛肝菌,沒有牛肝菌也可以這麼蒸,可以放點干貝或者XO醬什麼的,是在不行用油蒜蓉蒸也很好吃的.<br />

  ps:油蒜蓉的做法:比較多的蒜蓉放在一個小碗裡,加油沒過蒜蓉,再加入適量的鹽、雞精、生抽調勻,放微波爐裡叮一分鐘,取出攪勻就行了,用來蒸絲瓜、蒸豆腐、蒸魚都很好吃.<br />

  十一:清蒸鱸魚<br />

  材料: 鱸魚 蔥絲 <br />

  姜絲 鹽 蒸魚豉油 <br />

  做法:1.鱸魚洗乾淨後加紹酒、少許鹽、蔥絲、姜絲醃製15分鐘,隨後再沖洗乾淨,去去腥味;2.將鱸魚從尾部切開成蝴蝶狀,再從背部切一刀鋪在盤子裡,並在魚身下鋪上蔥姜絲,開水上鍋蒸5-6分鐘關火燜2分鐘.將盤子裡的湯汁倒掉,澆上蒸魚豉油,撒上蔥絲,最後澆上熱油就好啦.雖然切的不是很好,但是能縮短蒸魚的時間,散熱均勻,魚肉不會老。<br />

  十四:素炒牛肝菌<br />

  材料:牛肝菌 紅椒 <br />

  做法:1.干的牛肝菌先泡上幾個小時,洗淨泥沙,然後煮上15分鐘洗洗撈出控干水;西蘭花桿是前天做西蘭花的時候剩下的桿,扔了可惜,留下了,撕去老筋切成片就行,蒜切片,紅椒切塊。2.鍋裡加油燒熱後扔蒜片煸香後倒入紅椒西蘭花桿翻炒,然後再是牛肝菌,繼續翻炒大約3分鐘以上,調味,出鍋.<br />

  ps:干的牛肝菌在炒之前盡量煮上十幾分鐘,一定不要加蔥,容易中毒;新鮮的牛肝菌在鍋裡的時間一定不能低於3分鐘,炒糊的牛肝菌不能吃;為了保持新鮮牛肝菌的口感,可以事先過油脫水以後再炒.<br />

  做法:雞腿切塊,鍋裡加入適量的香油後倒入雞塊翻炒2分鐘至雞腿肉看不到血色,隨後加入白糖、醬油、薑片繼續翻炒均勻,改小火,把小火辣椒段放在雞塊上面,燜10分鐘,最後炒勻出鍋就好啦!<br />

  PS:雞肉本身就會出水,所以整個過程都不用加水,小火燜熟爛就好.<br />

  裙帶菜(不是海帶啊)泡發後洗乾淨剪成段備用;蘑菇一點點洗乾淨撕小塊;盒豆腐切成方塊;<br />

  三十:干貝萬年青<br />

  干貝萬年青,好貴的干貝,差不多200一斤,稀里糊塗的買了;好便宜的萬年青,5塊錢買了一大包,吃了一年還剩下一半.萬年青菜乾以其色澤翠綠,與觀賞植物萬年青相似而得名。二、三月間,當冬油菜的菜蕻大量萌發時,取其頂端三四節嫩尖為原料,放入沸水煮泡2-3分鐘,當三分熟七分生時,迅速撈起散熱,放在竹竿繩架上,吹風晾至八九成干,再移至陽光曬乾.由於其特殊的加工工藝,鮮菜中的維生素C和礦物質大多未受損失,所以它雖是乾菜,但仍不失口味.<br />
<br />
  做法:1.干貝洗乾淨後用少量溫水泡發,或者是連水一起上鍋蒸10分鐘備用<br />
<br />
  2.萬年青用熱水泡發洗後乾淨控干水備用<br />
<br />
  3.鍋裡加油燒熱後倒入少許的姜蒜末炒香,倒入發好的干貝翻炒,隨後倒入萬年青翻炒,最後少量烹入蒸(或者泡)干貝的水(非常鹹)調味,炒勻即可.<br />

  烏皮土仔公雞1000克、花椒油10克、白糖10克、芝麻醬10克、姜蒜汁30克、麻油30克、蔥花10克、料酒30克、熟白芝麻20克、熟油辣椒50克、紅醬油10克、熟花生末25克、醋10克、味精25克。<br />

  ≮美食做法≯<br />

  1、將活雞宰殺洗淨,去腳和翅尖,入沸水中汆去血水,然後撈起用清水沖洗乾淨。<br />

  2、鍋中摻水燒到70攝氏度時放入雞,下入蔥節、薑片、花椒、料酒、精鹽,煮到剛斷生時起鍋,放入冷湯中浸泡,待冷後撈起,斬切成條形裝入凹形盛器中。<br />

  3、將紅醬油、姜蒜汁、芝麻醬、熟油辣椒、花椒油、白糖、醋、味精、紅油、麻油於碗中對成汁淋在雞條上,撒上芝麻、花生末、蔥花即成。<br />
