蠔油&nbsp;&nbsp;1湯匙&nbsp;&nbsp;<br />
糖&nbsp;&nbsp;1茶匙&nbsp;&nbsp;<br />
生粉&nbsp;&nbsp;2茶匙&nbsp;&nbsp;<br />
老抽&nbsp;&nbsp;1湯匙&nbsp;&nbsp;<br />
胡椒粉 少許&nbsp;&nbsp;<br />
麻油 少許&nbsp;&nbsp;<br />
水&nbsp;&nbsp;1/2杯&nbsp;&nbsp;<br />

做法: <br />
鮮蜆放清水內浸數小時吐沙並瀝乾水.&nbsp;&nbsp;<br />
燒熱油, 爆香蒜茸、豆豉茸、薑絲及豆瓣醬, 即下蜆炒勻, 灒酒, 加入調味料, 炒至汁收濃, 加入蔥段, 炒勻後上碟.<br />
