蠔油黃瓜拌海蜇

1.海蜇頭切絲清洗、浸泡。<br />

<strong><font face="仿宋_GB2312"><font size="4"><font color="blue">3.焯燙海蜇絲後過涼。焯時切記兩點:一是千萬別等水沸騰,當鍋裏的水開始冒小氣泡時就可以了;二是焯水一定要迅速,海蜇入鍋後馬上就撈出在準備好的冰水中。要是這兩點沒掌握好,海蜇很容易就變老了。<br />

<strong><font face="仿宋_GB2312"><font size="4"><font color="blue">4.蠔油上鍋蒸5分鐘左右(去腥增香),加入麻油、白糖、攪拌均勻。黃瓜擠去多餘的水分,碼在碗底,再放焯好的海蜇絲和小米辣。 <br />
把蒸好有蠔油澆在海蜇上了,臨吃時再澆蒜醋汁。<br />
