脆皮乳鴿

製法: (1) 將乳鴿除去內臟洗淨。另 將各種香料放進鶏湯內,上鍋煲1小時,即成白滷水汁 。<br>
<br>
&nbsp; &nbsp;&nbsp; &nbsp;&nbsp;&nbsp;(2) 再將乳鴿放入白滷水汁內 , 即停火,浸1小時後取出 。<br>
<br>
&nbsp; &nbsp;&nbsp; &nbsp;&nbsp;&nbsp;(3) 用飴唐 .白醋調成糊狀 .塗在乳鴿皮上 .掛在通風處吹3小時 .<br>
<br>
&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp;&nbsp; &nbsp; 再放生油下鍋將乳鴿放下炸至金黃色 .取出切塊下碟 .澆點椒鹽粉便成。&nbsp; &nbsp;<br>
